Coconut Flour Banana Bread (GF, DF)

This recipe is super easy to make and is SO moist. It's a definite crowd pleaser and not super sweet.
Ingredients:
- 3 ripe bananas
- ¾ cup coconut flour
- 5 eggs
- ⅓ cup coconut sugar
- 1 tsp ground cinnamon
- 2 tsp baking powder
- ¼ tsp salt
- 1 tsp vanilla extract
- Optional Toppings: walnuts or dark chocolate chips
Directions:

1. Preheat the oven to 350ºF and grease your loaf pan (9x5 inch)

2. In a large bowl, mash the bananas with a fork. Add in the coconut flour, eggs, coconut sugar, cinnamon, baking powder, salt, and vanilla. Use a whisk to stir the batter until smooth.

3. Pour the batter into your loaf pan and add any additional toppings.

4. Bake about 45 min, until the center of the loaf has risen and started to crack. Use butterknife to see if the center is baked enough (the knife should come out clean).

5. Cool before slicing. Store in an air tight container in the fridge to keep fresh!
